403 Forbidden Bar introduces a high-concept culinary experience this April with an exclusive one-day Chef Takeover, featuring Chef Saurabh Udinia as part of its 403 OVERRIDE FIREWALL X series.
Scheduled for April 19, the collaboration brings together two distinct creative approaches progressive Indian cuisine and technique-driven mixology, into a single, immersive dining format. Designed as a one-day-only experience, the takeover moves beyond traditional restaurant formats to offer a structured, narrative-led culinary journey.
Known for his fire-led cooking philosophy and modern interpretation of Indian flavours, Chef Saurabh Udinia presents a bespoke menu crafted exclusively for the event. Rooted in traditional techniques and bold flavour profiles, the menu is designed as a layered sensory experience, where each dish forms part of a larger, cohesive narrative. In keeping with the experiential format, the menu will be revealed only at the venue, encouraging a more intuitive and engaging dining experience.
Complementing the culinary offering is the bar’s signature cocktail programme, where techniques such as distillation, clarification, and infusion are used to create flavour-forward pairings. Each cocktail is designed to align with the menu, enhancing the overall experience through thoughtful integration rather than operating independently.
The setting further elevates the experience. Inspired by the digital “403 access denied” concept, the space at 403 Forbidden Bar encourages guests to disconnect from distractions and fully engage with the moment. From lighting and sound to service design, every element is curated to create an immersive and cohesive atmosphere.
Sharing his perspective, Chef Saurabh Udinia said, “For me, it’s always about flavour first. This menu is built around dishes I enjoy cooking and eating, using strong Indian flavours, clean techniques, and a sense of balance across the meal.”
