Overview

AER, the rooftop bar at Four Seasons Hotel Mumbai, is marking Negroni Week from September 22 to 28, 2026, with a cocktail menu that brings a contemporary Indian perspective to the classic Italian aperitivo.

The week-long experience explores how traditional cocktail craft can be reinterpreted through Indian techniques and ingredients, while retaining the character of the classic Negroni.

Leading the menu are two original creations developed at AER — Amaro Nero and La Dolce Vita.

Amaro Nero combines Buffalo Trace Bourbon, The Great Amaro Liqueur and bitters, with the drink rested overnight in an unsalted butter-seasoned earthen clay pot. Drawing inspiration from India's longstanding use of clay vessels in food and beverage traditions, the technique is designed to soften the spirit while bringing forward notes of bitter-sweet orange, dark cacao and roasted almond.

La Dolce Vita takes a lighter approach, combining Malfy Gin, Amaro Montenegro, Campari and cold brew coffee before being finished with soda. The resulting serve brings together citrus, bitterness and coffee with a more refreshing profile.

Speaking about the menu, Sher Thakur, Director of Beverage, Four Seasons Hotel Mumbai, said, “Across India, clay has long been part of our Indian heritage of how we preserve, enrich and transform flavours. This has inspired our Negroni Week menu, helping us to explore how a familiar technique could bring new depth to a classic. We wanted the menu to feel rooted in Indian craft while keeping the spirit of Negroni at its core.”

The Negroni Week experience at AER will also feature creations from bars across the Four Seasons network in the region, including Copitas at Four Seasons Hotel Bengaluru and BKK Social Club at Four Seasons Hotel Bangkok at Chao Phraya River.

The regional selection brings together different interpretations of the Negroni, allowing guests to explore how individual bar teams approach the classic cocktail through their own techniques and creative perspectives.

Nitesh Gandhi, General Manager, Four Seasons Hotel Mumbai, said, “At Four Seasons Hotel Mumbai, we look to create experiences that feel contemporary while drawing inspiration from the richness of India. Negroni Week brings that philosophy to life, blending modern techniques with cocktail craftsmanship from around the world.”

He added that bringing together AER's bar team with Negroni creations from Four Seasons bars across the region offers guests an opportunity to experience the classic cocktail through a distinctly Mumbai perspective.

Set against AER's rooftop setting, the Negroni Week menu brings together contemporary mixology, Indian-inspired techniques and regional cocktail creativity, offering a new interpretation of the classic aperitivo.
