This Republic Day, Anise, the all-day dining restaurant at Taj Coromandel, Chennai, is set to host a grand Pan-Indian culinary celebration that brings together flavours from across the country. On January 26, the restaurant invites guests to come together over a specially curated brunch that reflects India’s unity, heritage and regional diversity through food.

The festive experience begins with a refreshing selection of beverages designed to awaken the palate. Guests can sip on Saffron Lassi Shooters, Jaljeera Mojito, Guava-Mint Fizz, Kokam Mule and a Mango-Passion Mocktail, setting the tone for a relaxed and indulgent afternoon.

The elaborate spread moves through a wide spectrum of regional favourites. A thoughtfully composed salad section features Masala Peanut Sundal, Carrot Kosambari, Punjabi Lacha Onion Salad and roasted sweet potatoes paired with balsamic-marinated fruits, along with a well-curated cheese station. These lighter starters offer a balance of freshness and traditional flavours.

Adding energy and nostalgia to the brunch are interactive live counters inspired by India’s vibrant street food culture. Guests can enjoy a tricolour Paani Poori experience at the Desi Chaat Station, savour a flavour-packed Goan Rasa Omelette, and indulge in a sizzling kebab selection that includes Kothmir Paneer Tikka, Methi aur Corn Seekh, Prawn Sukka and the bold Ghost Shikampuri.

The main course highlights the true depth of India’s culinary landscape, presenting a mix of vegetarian and non-vegetarian classics. Signature dishes include Rajasthani Paneer Masala, Punjabi Chole Pindi, Mutton Chettinad, Bengali Fish Curry, Kashmiri Mutton Yakhni Pulao and aromatic Thalasseri Chicken Biryani. These are complemented by freshly prepared Kerala parathas, naans and rotis, completing the comforting feast.

The celebration concludes on a sweet note with an extensive dessert spread featuring the chef’s signature creations, offering a satisfying finale to the Republic Day brunch.
