Mumbai’s cocktail scene is set to get a fresh dose of Southeast Asian flavour as Siren Cocktail Bar from Bengaluru lands in the city for its first-ever bar takeover at Olive Bar & Kitchen, Bandra, on Saturday, August 2, 2025.

Siren, known for its modern and minimal take on Asian cocktails, is headed to Mumbai’s favourite courtyard for a one-night-only event that promises flavour, flair and storytelling—all in a glass.

“Siren may be new, but its philosophy is rooted in timeless Asian craft,” says AD Singh, Founder & MD, The Olive Group. “We’re proud to welcome them to Olive Bandra—a space that’s always embraced innovation.

Led by ‘The Bitters Alchemist’

At the helm of the event is Akshay Singh, Head Mixologist at Siren. Known in the industry as “The Bitters Alchemist,” Akshay brings a unique, emotion-first approach to cocktails. His creations are inspired by traditional Asian techniques like tea infusions, fermented ingredients, and spice-forward blends—yet remain clean, modern, and light.

The Cocktail Lineup

Expect four specially curated cocktails on the night, each built with Siren’s trademark clarity and regional memory:

• Bang Bang – Tequila with house-made Bang Bang sauce, Sichuan chilli, and just the right kick of heat.
  
  

  

• Peking Duck – Duck fat-washed bourbon infused with hoisin and plum; a savoury-sweet nod to traditional Chinese flavours.
  
  

  

• Cha Do – A warm, tea-based gin cocktail served from a Chinese teapot, no garnish, just clean and crisp.
  
  

  

• Green Apple Salad – Tequila with green apple, Sichuan pepper and dried chilli; inspired by the bold freshness of Thai starters.
