Saffron, spices, and centuries of culinary mastery converge on a grand copper platter for Wazwan, the legendary royal feast of Kashmir, at Rosetta Sakleshpur. This culinary celebration is hosted exclusively at the resort’s signature Indian restaurant, Merchants of Spice, inviting guests to indulge in a regal experience of flavours and traditions.
Rooted in Persian and Central Asian influences, Wazwan found its way to Kashmir in the 14th century and has since become an integral part of weddings and festive gatherings in the valley. The feast traditionally spans seven to thirty-six courses, served upon a gleaming copper trami, where guests come together to share food, laughter, and stories, a symbol of community and Kashmir’s rich culinary legacy.
At Merchants of Spice, the Wazwan menu unfolds through four unique experiences, Sabzi Thael, Kokar Traem, Maaz Traem, and Sath Seyn Traem. These elaborate spreads feature delicacies like aromatic Rogan Josh, tender Gushtaba, spicy Rista meatballs, and crispy Tabak Maaz lamb ribs, alongside vegetarian dishes such as Buzith Tschaman paneer and Waazeh Palak. Served on a grand Trami platter with Kong Batte rice, spiced Kahwa, and Kong Phirin dessert, every course offers a journey through Kashmir’s soulful culinary traditions.
Every dish is crafted under the expert guidance of the Vasta Waza, the master chef leading his brigade of culinary artisans with skill and pride. Each ingredient is chosen with precision, and every spice is balanced with purpose, transforming every dish into an expression of devotion. From saffron-infused slow-cooked lamb to hand-rolled meatballs simmered in fragrant gravies, each course tells the story of Kashmir’s timeless culinary craftsmanship.
