This Independence Day, Encalm Hospitality is bringing India's diverse culinary traditions to travellers through A Taste of Independent India, a week-long food celebration across its airport lounges.

Running from 8th to 15th August at Encalm Lounges in Delhi, Hyderabad and Goa, the campaign will showcase a different regional menu each day. The experience gives travellers an opportunity to explore flavours and recipes inspired by different parts of India while on their journey.

Built around the theme 'One Nation. Six Regions. Countless Flavours.', the menus have been curated by Chef Ritesh Negi, Head of Culinary, Encalm Hospitality, along with the culinary team. The selection highlights ingredients, recipes and cooking traditions from six distinct regions of the country.

The regional spread includes dishes such as Murgh Malai Tikka, Chettinad Chicken, Chicken Dak Bungalow, Fish Koliwada, Bhopali Chicken Korma and Manipuri Chicken Curry. Vegetarian favourites include Avial, Paneer Hyderabadi, Matar Paneer and Paneer Bhopali.

The celebration also features interactive regional specials including Kolkata Jhalmuri, Dahi Bhalla Papdi Chaat, Dabeli, Pesarattu with Chutney and Indori Aloo Ratalu Chaat.

Desserts complete the regional journey with traditional favourites such as Kesar Phirni, Coconut Semiya Payasam, Sandesh, Mohanthal and Sheer Khurma.

Along with the food, travellers can discover the stories behind the dishes through regional narratives, adding a cultural element to the dining experience.
