Fairfield by Marriott Kolkata invites food lovers to experience the soulful and diverse cuisine of Meghalaya at KAVA restaurant through its special Meghalaya Food Festival, running from March 21 to 30, 2025. This week-long celebration will feature authentic dishes representing the culinary heritage of Meghalaya’s three major tribes—Khasi, Jaintia, and Garo.
Chef Ahmedaki Laloo, a culinary artist deeply rooted in Jaintia traditions, will curate the festival’s menu, bringing to life the region's age-old recipes and indigenous cooking techniques. Diners can expect to savor iconic dishes such as Jadoh, Dohkhlieh, Tungrymbai, and Kharang, along with other signature delicacies like Do∙o Kapa, Wak Tangsek Pura, and the flavorful Doh Sniang Nei-Iong. The menu will also highlight fermented ingredients and locally sourced elements such as bamboo shoots, wild mushrooms, and indigenous herbs, which are staples in Meghalayan kitchens.
Guests can enjoy these distinctive dishes through buffet dinners from Monday to Friday, and both buffet lunch and dinner on weekends. The festival promises an immersive dining experience celebrating Meghalaya’s rich gastronomic traditions, complemented by KAVA’s warm hospitality.

As the founder of A’Origins, a brand focused on sustainability and authenticity, she is committed to honoring Meghalaya’s culinary roots while creating dishes that resonate with modern diners.
