Food Exchange at Novotel Vijayawada Varun is bringing the distinctive flavours of Bengal to Vijayawada with a five-day Bengali Food Festival from 21 to 25 August 2026. The culinary celebration brings together Kolkata-style street food, traditional Bengali preparations and festive regional favourites for local families, food enthusiasts and diners looking to explore East Indian cuisine.
The festival showcases the depth and diversity of Bengali cooking, known for its nuanced use of mustard, poppy seeds, coconut, fresh herbs and subtle spices. The specially curated menu moves from familiar Kolkata street-style favourites to hearty Bengali mains and traditional sweets, offering guests an opportunity to discover the cuisine through a contemporary hotel dining experience.
The culinary journey begins with soups such as Murgir Jhol and Tomato Dhonepata Shorba, followed by a selection of appetisers including Phulkopir Bora, Mochar Chop and the classic Kolkata Chicken Cutlet.
Guests can also explore Kolkata-inspired street food and snacks, including Babughat Chaat, Kachori with Radhaballavi Puri and Aloor Dum, bringing some of the city's familiar roadside flavours to Food Exchange.
The main course highlights several signature Bengali preparations. The spread includes Kolkata Mutton Biryani, Chingri Bhuna, Kosha Mangsho, Phulkopi Aloo Dalna and Cholar Dal, showcasing the contrasting textures, spices and cooking styles associated with Bengali cuisine.
The festival concludes with a selection of traditional Bengali desserts, including Rasgulla, Sandesh, Mishti Doi and Patishapta, offering diners a sweet finish to the regional culinary experience.
