Four Seasons Hotel Bengaluru is set to transport food connoisseurs to the grandeur of royal kitchens with its exclusive culinary showcase, 'Sigri Aur Dum.' Taking place from February 7 to 16, 2025, at CUR8, the hotel's elegant all-day dining restaurant, this gastronomic celebration is helmed by Chef Mohammed Nadeem Qureshi, a distinguished heir to a lineage of Lucknow-based khansamas - the master chefs who once served the Nawabs.
Drawing from centuries of culinary heritage, 'Sigri Aur Dum' brings two iconic North Indian cooking techniques to the forefront. Sigri grilling, known for its slow-roasting method over an open flame, enhances the natural flavors of kebabs and meats, while Dum cooking - a slow, sealed method of preparation—infuses aromatic spices into rich, indulgent dishes. This showcase promises an experience that is not just about taste but about history, technique, and artistry.
The curated menu offers a lavish spread, including delicacies such as the melt-in-the-mouth Kakori Kebab, Banno Kebab, and Murgh ke Parche, prepared on the live Sigri station. The Dum selection features timeless classics like Dum ka Murgh, Haleem, and the rare Mutanjan Pulao - a dish once reserved for the most regal celebrations. Another seasonal highlight is the Sarson ke Phool, celebrating winter flavors with a smoky twist.
Beyond the indulgence of flavors, the event offers an interactive experience, with live cooking stations allowing guests to witness the mastery of Sigri grilling and Dum cooking. For culinary enthusiasts, the festival also features immersive masterclasses and hands-on cooking challenges led by Chef Nadeem Qureshi himself.
