Hyatt Regency Delhi has unveiled a thoughtfully curated Kashmiri Food Festival at Café, the hotel’s signature all-day dining destination, bringing the rich culinary heritage of Kashmir to the capital. Scheduled from 30 January to 8 February 2026, the festival is a limited-period showcase designed to highlight the depth, elegance, and cultural significance of Kashmiri cuisine.
Rooted in traditional slow-cooking techniques, the festival menu celebrates the nuanced use of aromatics such as saffron, fennel, dried ginger, and Kashmiri chillies. Guests can explore a wide range of flavours through a multi-course buffet that reflects the ceremonial food traditions of the region. From delicately spiced gravies to slow-cooked meats and classic preparations, the spread offers a well-rounded introduction to the soul of Kashmiri cooking.
The menu has been curated in collaboration with Chef Rehman, a specialist in Kashmiri cuisine who is known for preserving age-old cooking methods and authentic flavours. His expertise ensures that each dish stays true to its roots while meeting the expectations of a refined luxury dining experience. “Every dish is rooted in memory, technique, and respect for tradition. This menu is an invitation to experience the fragrance and warmth of Kashmiri hospitality,” says Chef Rehman.
To complement the culinary offerings, the festival also features traditional beverage pairings, including Kashmiri Kahwa, along with select coolers and lassi variants. The ambience at Café will be subtly enhanced to echo the aesthetics of the valley, creating an immersive yet elegant dining atmosphere.
