This summer, Radisson Blu Ahmedabad is serving up sunshine on a plate with the return of its much-awaited Mango Festival, a vibrant celebration of India’s most cherished seasonal fruit. Running from May 16th to May 31st, the festival takes place at the hotel’s signature restaurant, Timpani, from 7:30 pm to 10:30 pm, offering a curated menu that blends nostalgia, innovation, and global flair — all inspired by the king of fruits.
Spearheaded by Executive Chef Rakesh Singh Negi and his expert culinary team, the Mango Festival showcases 10 standout mango-based dishes, each thoughtfully crafted to explore the versatility and emotional resonance of mangoes in Indian and international cuisine.
“Mango is not just a fruit, it’s an experience that evokes memories and inspires creativity,” shares Chef Negi. “This menu is our way of celebrating that emotion, using both local and global influences.”
From refreshing salads and comforting mains to indulgent desserts, the festival menu captures the essence of summer in every bite. Highlights include:
Vanilla Mango Pudding: A silky panna cotta-style dessert crowned with mango purée and a touch of vanilla, perfect for a sweet summer ending.
Khatti Dal with Raw Mango: A homely lentil dish elevated by the tangy punch of raw mango, bringing comfort and depth.
Kacchi Keri ka Sorba: A chilled, tangy soup made from roasted raw mango — ideal for a light, palate-refreshing start.
Aam ke Kofte: Soft paneer and mango dumplings in a delicately spiced tomato-mango curry — indulgent and vegetarian.
Mango Gosht: Slow-cooked mutton simmered with mango pulp and spices, inspired by Hyderabadi culinary traditions.
Mango Dahi ke Kebab: Yogurt-based kebabs studded with mango bits, crisp on the outside and creamy within.
Hari Mirch Aam ka Murgh Tikka: A smoky chicken tikka marinated in raw mango, green chilli, and mint — bold and flavourful.
Spicy Mango Salad: A zingy mix of julienned mango, paprika, and microgreens — zesty and refreshing.
Thai Raw Mango Salad: A tropical twist with shredded mango, crushed peanuts, and lime dressing — light and crunchy.
Curried Quinoa Mango Salad: A wholesome mix of quinoa, curried mayo, mango cubes, and toasted seeds — nourishing and modern.
