Marriott Executive Apartments Hyderabad has launched Saptaswara, a specially curated seven-course menu that brings the soul of Kerala’s Malabar cuisine to the city. The experience is available for one week only, from December 1 to 7, 2025, at Mazzo Rooftop Bar.
Curated by Chef de Cuisine Suresh Rajan Pillai, the menu celebrates the coastal heritage of Malabar, known for its deep-rooted spice culture, aroma-rich curries and coconut-forward preparations. Saptaswara draws inspiration from the seven musical notes, offering diners a journey that blends traditional flavours with modern presentation.
“Saptaswara is more than just a meal; it’s an immersive dining experience,” said Chef Suresh Rajan Pillai. “The menu unfolds like a classical performance, starting with light and refreshing compositions, moving into hearty and soulful main acts, and ending on a sweet, lingering crescendo.”
The menu opens with delicate bites inspired by Kerala’s serene waters and spice gardens, highlighting the aromas of curry leaves, coconut and roasted spices. Diners can enjoy familiar favourites like Avial, spiced Kerala prawns and a comforting Malabar seafood bisque. Contemporary interpretations such as banana leaf–wrapped tender jackfruit and slow-baked chicken with house-roasted masalas add a modern touch. Each course is paired with accompaniments like raw mango chammanthi to bring balance and depth.
A fragrant Malabar biryani, enriched with saffron, cashews and raisins, adds a celebratory highlight to the experience. The meal concludes with classic elaneer payasam, crisp banana fritters and a soothing tulsi–lemongrass–ginger tea, reflecting Kerala’s wellness-driven culinary traditions.
The experience promises to transport diners to the backwaters, spice trails and coastal kitchens of God’s Own Country—evoking memories of familiar Malabar flavours, from homely coastal meals to the iconic charm captured in films like Ustad Hotel.
