With Navratri in the air, Mazzo at Marriott Executive Apartments Hyderabad is bringing a festive culinary experience that celebrates saatvik traditions of purity, balance, and nourishment. From September 22 to October 2, Chef de Cuisine Suresh Rajan Pillai presents a thoughtfully crafted all-vegetarian menu featuring over 40 fasting-friendly dishes. This spread reimagines traditional vrat cuisine with a contemporary touch, transforming classic recipes into an indulgent feast.

The menu begins with popular fasting favorites like sabudana vada, arbi galouti, lotus stem chips, rajgira tikki, and falahari dahi kebabs. Guests can enjoy interactive live counters, including a South Indian tiffin station serving mini dosas and kuzhi paniyaram, and a Gujarati farsan counter with handvo, khandvi, and patra, all prepared without onion or garlic.

Daily rotating main courses highlight vrat-style specialties such as Dum Aloo Vrat Wale, Aloo Tamatar Rasedar, and Aloo Singhare ki Sabzi, complemented with paneer delicacies. A curated rasam collection featuring drumstick, Mysore, pepper-curry leaf, and tamarind varieties adds warmth, while the signature Navratri saatvik biryani anchors the grain selection alongside lemon, tamarind, coconut, and peas pulao.

Wholesome salads like cucumber-peanut, carrot-coconut, and papaya-pomegranate accompany a vibrant raita bar. Desserts include sabudana kheer, lapsi, and pazham pradhaman, along with puddings and a traditional ice cream counter.

“This menu is a journey into India’s ancient culinary wisdom,” says Chef Suresh Rajan Pillai. “We’ve honoured the purity of vrat cooking while enhancing flavours with modern techniques, drawing on ingredients and traditions from 15 regional cuisines to create an authentic yet elevated Navratri experience.”
