Novotel Hyderabad Airport, located in GMR Aerocity Hyderabad, is celebrating the culinary traditions of Gujarat and Marwar with Jamvanu Jalsa, a special vegetarian dinner buffet curated by Chef Nilay Rajani at Food Exchange from October 12 to 20, 2026.
The dining experience brings together regional vegetarian preparations that highlight the variety of ingredients, flavours and cooking traditions associated with western India. Coinciding with October's Vegetarian Awareness Month, the initiative also offers guests an opportunity to explore vegetarian cuisine beyond everyday staples.
The specially curated menu features dishes such as Ker Sangri Kofta, Khatti Meethi Dal, Turai Matar Ki Subzi and Lasooni Aloo. Together, the preparations showcase contrasting flavour profiles, from sweet-and-sour lentils to vegetable-based dishes shaped by traditional regional cooking.
Jamvanu Jalsa draws on the home-style culinary traditions of Gujarat and Marwar, where vegetarian food forms an important part of everyday meals and festive gatherings. Through the dinner buffet, the hotel aims to introduce guests to regional favourites while highlighting the breadth of India's vegetarian food heritage.
Speaking about the initiative, Chef Nilay Rajani said Jamvanu Jalsa celebrates the culinary heritage of Gujarat and Marwar through flavours rooted in tradition and home-style cooking. He added that the menu was designed to showcase the variety of vegetarian cuisine while offering guests an authentic and inviting dining experience.
The initiative also places a spotlight on the diversity of vegetarian food traditions across India, where regional ingredients, preparation methods and flavour combinations create distinct culinary identities. By bringing these traditions together in one dining experience, the hotel aims to encourage guests to explore regional vegetarian specialities.
