Novotel Vijayawada Varun is set to bring the rich culinary traditions of the Parsi community to diners through a specially curated experience at Food Exchange on June 7, 2026. The event is part of the hotel’s ongoing Lost Cuisines series, a six-month initiative dedicated to celebrating India’s lesser-known and fading regional food traditions.

Known for its unique blend of Persian roots and Indian influences, Parsi cuisine has long held a special place in the country's culinary landscape. While the Parsi community may be small in number, its contribution to India’s cultural, industrial, and social fabric has been immense. Their cuisine reflects this legacy through dishes that beautifully balance sweet, sour, and spicy flavours while preserving generations of tradition and storytelling.

Through this edition of Lost Cuisines, Novotel Vijayawada Varun aims to offer guests an authentic glimpse into the flavours and heritage of the Parsi table. The showcase has been designed to go beyond a themed dining experience and serve as a tribute to a community whose culinary traditions continue to influence Indian gastronomy.

Speaking about the initiative, Manish Pathak, Hotel Manager, Novotel Vijayawada Varun, said, “Parsi cuisine carries an extraordinary story of heritage, adaptation and community. It belongs to a culture that may be small in number, but has had a lasting impact on India in so many ways. Through this edition of Lost Cuisines, we wanted to celebrate that legacy through food that is deeply comforting, beautifully layered and rooted in tradition.”

The specially curated menu will feature a selection of traditional favourites, beginning with dishes such as Russian Salad and Sunshine Salad. Guests can also savour appetisers including Chicken Farcha and Tatrelu Gosh, showcasing the distinctive flavours associated with Parsi cooking.

The main course highlights several iconic dishes from the community’s culinary repertoire, including Patra Ni Machi, Tomato Per Edu, Sali Marghi, Kid Gosh, and the much-loved Mutton Dhansak served with Caramelised Rice. Diners will also have the opportunity to enjoy Mutton or Chicken Berry Pulao, a dish often associated with festive Parsi gatherings.

To complete the experience, the dessert selection will include traditional sweet treats such as Ravo, Sev, and the popular Lagan Nu Custard, offering a fitting conclusion to the culinary journey.

Curated by the hotel’s culinary team, the showcase reflects the warmth, generosity, and distinct flavour combinations that define Parsi cuisine. By presenting authentic recipes and heritage cooking techniques, Novotel Vijayawada Varun continues to strengthen the Lost Cuisines platform as a celebration of India's diverse food traditions and culinary heritage.
