Radisson Blu Bengaluru Outer Ring Road is celebrating India's 80th Independence Day with a specially curated regional brunch at Melange, bringing together flavours and culinary traditions from across the country on August 15.

Designed as a culinary journey across India, the Independence Day brunch will showcase regional recipes, festive favourites and traditional specialities representing different parts of the country, offering guests an opportunity to explore India's diverse food heritage without leaving Bengaluru.

The experience begins with refreshing welcome beverages including Shikanji and Aam Ka Panna, followed by an elaborate selection of salads, chaats and live counters.

The Gujarati section will feature favourites such as Dhokla, Fafda, Dabeli and Khandvi, while the Hyderabadi spread will include Haleem and Lukhmi with Makhmali Paratha.

Guests can also explore Kolkata's culinary traditions through Chicken Chaap and Bhetki Paturi, alongside Maharashtrian specialities such as Bhakri, Jhunka and Komdi Cha Rassa. The Amritsari selection will feature Chole, Kulche and Gurda Keema Kalegi.

The regional journey continues with Gatta Ki Subzi and Dal-e-Zaffran from Rajasthan, Mathanga Erissery from Kerala, Mangalorean Kori Gassi, Lucknowi Gosht Dum Biryani and Ambur Veg Dum Biryani.

The menu will also feature non-vegetarian specialities including Gosht Salli Boti Jardaloo, Dukra Maas and Fish Panna Upkari, complemented by live stations, handcrafted preparations and festive desserts.

More than a celebratory meal, the brunch aims to showcase India's culinary diversity through dishes rooted in regional traditions, ingredients and cooking techniques.
