Chef Manuel's culinary journey began in the UNESCO heritage town of Toledo, Spain, where he developed a sensory-driven approach to cooking. His culinary philosophy is simple yet profound: he aims for guests to savour the essence of each ingredient, embracing rich, robust flavours that highlight the quality of produce, ensuring exceptional taste.
His restaurant, La Loca Maria, has quickly become a culinary destination in Mumbai, celebrated for signature dishes like Paella, Gambas Al Ajillo, Mushroom Truffle & Ham Croquettes, and the crowd-favourite reimagined La Loca Tiramisu.

The evening will feature an exclusive 9-course vegetarian and non-vegetarian menu, showcasing Chef Manuel’s approach to reimagining Spanish classics. La Loca Maria pays homage to Chef Manuel Olveira's mother, Maria, who inspired his passion for cooking. Born in Toledo, Spain, Chef Olveira grew up cooking at his family-owned restaurant. After honing his skills at Michelin-starred restaurants in Madrid and working in Dubai and Mumbai, he opened La Loca Maria, a modern Spanish cuisine restaurant in Mumbai, with his Indian wife, Pratima Tuljapurkar.
