Sayaji Hotel Vadodara is bringing the flavours of India's diverse culinary traditions to one table with its ‘Flavours of India’ food festival at Cravings. Running from October 9 to October 18, 2026, the festival follows the theme ‘One Nation – One Festival’, allowing guests to explore popular dishes from North, South, East and West India through a special dinner buffet.

Curated by the hotel's culinary team, the spread features a wide range of regional favourites. North Indian dishes include Dal Makhani, Paneer Lababdar, Amritsari Chole, Murgh Tikka Masala, Gosht Roganjosh and Subz Jalfrezi. The South Indian selection brings Hyderabadi Chicken Biryani, Vegetable Chettinad, Kerala Fish Curry, Andhra Dal and Vegetable Stew with Appam to the table.

Guests can also explore the flavours of Western India through Gujarati Dal, Undhiyu, Sev Tameta, Kathiawadi Lasooni Bateta, Laal Maas and Dal Baati Churma. The East Indian spread features Bengali Aloo Posto, Kosha Mangsho, Bengali Fish Curry, Dalma and Vegetable Panch Phoron.

The dining experience begins with refreshing Indian drinks, including Masala Chaas, Sweet and Salted Lassi, Aam Panna, Jal Jeera, Fresh Lime Soda and Masala Tea. The starters menu features Amritsari Fish Tikka, Mutton Seekh Kebab, Tandoori Chicken, Andhra-style Chicken 65, Paneer Tikka Angare, Mini Dosas, Khandvi, Gujarati Corn & Paneer Tikki and Bengali Fish Fry.

Indian breads and rice preparations add to the spread, while the dessert selection offers traditional favourites such as Gulab Jamun, Rasmalai, Jalebi with Rabri, Shrikhand, Mishti Doi, Malpua with Rabri and Kulfi.

Beyond the food, Cravings will feature themed décor and live singing to create a lively setting for an evening of dining and entertainment. Guests visiting with family and friends can enjoy the festive atmosphere while exploring dishes from different parts of the country.
