The Oberoi, Mumbai Hosts a Culinary Pop-Up By BOYA, Delhi From 17th to 19th July 2025, Fenix at The Oberoi, Mumbai sets the stage for a gourmet celebration as it welcomes Chef Augusto Cabrera of BOYA, Delhi for an exclusive three-day Japanese-Peruvian fusion pop-up.

Known for its global elegance and warm ambiance, Fenix makes an ideal backdrop for this special culinary event. The space, reminiscent of a refined yet inviting living room, now becomes the playground for bold, inventive flavours straight from Delhi’s critically acclaimed BOYA.

Chef Augusto, who began his journey in the kitchens of The Oberoi, New Delhi’s award-winning 360°, brings with him decades of expertise and a distinct style that fuses Japanese precision with Peruvian soul. Renowned for his contribution to modern sushi culture in India, Chef Augusto’s signature dishes include Kokana Rolls, Cabrera Spiced, and Persea Americana, along with elevated fusion favourites like Yellowtail Carpaccio Ceviche, Sea Bream in Leche de Tigre, and Hokkaido Scallops Tiradito.

At the BOYA pop-up at Fenix, guests will savour a specially crafted menu of signature dishes. Appetizer highlights include Chicharron with Worcestershire, Rock Shrimp Tempura in Sriracha Mayo, and Filipino Pork Belly in Cane Vinegar. For mains, the menu features delights such as Arroz con Chancho (spiced pork with rice), Chilean Sea Bass in Saikyo Miso, and a luxurious selection of nigiri, sashimi, and signature vegetarian and non-vegetarian sushi rolls.

Reflecting on the experience, Chef Augusto Cabrera shared, “I began my career as a sushi chef at Oberoi Hotels & Resorts, so I am humbled and delighted to be returning for this exclusive event at The Oberoi, Mumbai. It is with deep and sincere gratitude that I now offer this menu of my personal favourites at Fenix.”
