As part of the ongoing O&MO Alliance between Oberoi Hotels & Resorts and the Mandarin Oriental Hotel Group, The Oberoi, Mumbai is set to host an exclusive three-day culinary and cocktail pop-up this January. From January 30 to February 1, 2026, the hotel will welcome the celebrated team from The Aubrey, Mandarin Oriental, Hong Kong, bringing its acclaimed Japanese dining and bar philosophy to Mumbai.
The collaboration will see The Aubrey take over Fenix and The Eau Bar, offering guests a rare opportunity to experience one of Asia’s most celebrated bar-led dining concepts. Ranked No. 10 on Asia’s 50 Best Bars List 2024, The Aubrey is known for its eccentric izakaya-style cuisine and inventive cocktails rooted in Japanese craftsmanship.
Leading the culinary experience is Emiliano Sebastian Comerso, Group Executive Chef, who spearheaded The Aubrey’s international expansion from Hong Kong to London and now oversees its culinary direction across flagship venues in Hong Kong and Dubai. Speaking about the collaboration, Chef Comerso said, “This New Year feels like the perfect moment to bring a taste of The Aubrey to The Oberoi, Mumbai. I’m excited to present something new to its discerning guests.”
At The Eau Bar, guests can expect a refined bar snack menu featuring dishes such as charcoal chicken karaage, spicy cauliflower with edamame hummus, and crispy lotus root. Fenix will host a more indulgent dining experience with offerings including salmon tartare, black cod, and an ultra-premium sando finished with caviar and gold. The experience concludes with the dramatic Mt. Fuji dessert, a sculptural finale that reflects the chef’s signature style.
Complementing the cuisine is a curated cocktail programme by Stefano Bussi, Head Mixologist at The Aubrey and Bartender of the Year for Hong Kong and Macau at Diageo World Class 2024. Known for his precision-led approach inspired by Japanese philosophy, Bussi’s menu at The Eau Bar will feature cocktails from his Art of Shibumi collection, including Hanako Toba, Chinmoku, Wa-Bi-Sa Negroni, and the Utsukushi highball, each crafted with balance, clarity, and innovative techniques.
