Luxury meets romance on the waters of Halong and Lan Ha Bays as Ambassador Cruise launches its new ‘Dining Under the Stars’ experience — a dreamy addition to its overnight cruises.

Guests are treated to a five-course gourmet dinner on the cruise’s elegant 360-degree sundecks, surrounded by the serene beauty of limestone karsts silhouetted against the night sky. The ambiance is made all the more special with white tablecloth service, warm lighting, and live performances by an international band playing familiar tunes in multiple languages including English, Vietnamese, Korean, Indian, and Filipino — every evening except Monday.

Crafted by executive chef Nguyen Gia Thien, the menu comes in two thoughtfully curated versions: a Western-inspired “Heritage By Night” and the traditional Vietnamese “Four Seasons.” From roasted sea bass with chorizo butter to deep-fried Halong squid cakes with sticky rice, every dish is created with premium ingredients and artistic flair. Guests get to personalize their experience by selecting two mains from gourmet options in the five-course meal.

This concept not only celebrates the natural magic of Halong Bay but elevates it into a multi-sensory event. “We wanted to offer something that would make people fall in love with the bay all over again,” shared Nguyen Cao Son, chairman of Asia Premier Cruises (APC) Corporation. “Ambassador Cruise is setting the bar with experiences that make travellers want to come back again.”

Chef Thien, who recently trained in France, credits his travels for the global touch in his creations. “That journey helped me blend my roots with international flavors,” he said.

‘Dining Under the Stars’ is now available on all overnight Ambassador Cruise journeys and will be offered on special dinner cruises during summer, for an added fee.
