With an illustrious culinary career spanning thirty years, Chef Fracalossi's gastronomic journey began in Italy in 1998, igniting a profound passion for the culinary arts. His dedication led him to refine his skills, and in 2003, he had the privilege of apprenticing under the esteemed Chef Antonino Cannavacciuolo at Villa Crespi.

During his five-year tenure, Chef Fracalossi played a pivotal role in earning the restaurant a prestigious 2nd Michelin Star, a testament to his exceptional culinary expertise.

Embarking on a worldwide culinary expedition in 2014, Chef Fracalossi traveled to countries such as Russia, Qatar, Vietnam, Malaysia, and Saipan. These diverse experiences allowed him to master a wide spectrum of cuisines while developing a profound respect for culinary customs globally.

In 2016, Chef Matteo Fracalossi joined the Hyatt community, making his mark as Chef de Cuisine at Park Hyatt Ho Chi Minh City. His inventive dishes and unwavering commitment to culinary perfection garnered acclaim, setting the stage for his extraordinary transition to Andaz Delhi.
