Carnival by Trèsind, one of Mumbai’s most acclaimed modern Indian restaurants, has redefined experiential dining with the launch of its new Carnival Experience Menu. Conceptualized by renowned Chef Sarfaraz Ahmed, this interactive eight-course tasting experience blends culinary storytelling with tableside theatrics—creating a whimsical journey where every dish surprises and engages.

Speaking about the bold new concept, Chef Sarfaraz shared, “I don’t just want to serve food. I want to tell a story with every plate—one that connects cultures, surprises the senses, and encourages our guests to play with their food again.”

The menu leans into “Edible Storytelling,” where each course unfolds like a theatrical act—complete with visual spectacles, sensory experiences, and nostalgia-laced flavors. Guests can choose between vegetarian and non-vegetarian variations of the set menu.

Highlights include:

  • Pani Puri Semifreddo, Bao Bhaji, Corn Chaat Pie-tee, Aamras Achappam – playful, bite-sized beginnings.

  • Kala Khatta Burrata Salad – a tribute to Juhu beach with blueberries and grapes.

  • Champaran Jackfruit Carnitas and Champaran-style soft tacos – a Bihari-style twist on street food.

  • Kanyakumari Crab Krapow and Mushroom Krapow with Vatayappam – Indo-Thai fusion rooted in southern coastal cuisine.

  • Parmesan & Saffron Khichdi – elevated with 24-carat gold leaf and served with olive pickle.

  • Recado Negro (Maharashtrian Kaala Mutton) – paired with kosambir and sourdough pao.

  • Kombdi Rassa with Chicken Dumplings – comforting, deeply regional.

  • Carnival Celebration Dessert – a dramatic, tableside finale.

Located in the vibrant neighbourhood of Juhu, the restaurant combines world-class technique with the spirit of Indian festivity, turning dinner into a multi-sensory performance. Each course is designed to provoke conversation, evoke nostalgia, and deliver delight.

Blue Tokai Teams Up with Ambrosia Gulf to Enter GCC Market, Debuts in UAE

India’s largest and fastest-growing specialty coffee brand, Blue Tokai Coffee Roasters, is making its way to the Gulf. In a strategic move, Blue Tokai has partnered with Ambrosia Gulf, which will serve as its master franchisee for the GCC, starting with a flagship launch in the United Arab Emirates. This marks the brand’s first official foray into the Middle East.

With over 175 cafés across India and an international footprint in Tokyo, this partnership is a key milestone for Blue Tokai as it looks to bring its signature farm-to-cup coffee experience to a new audience.

Ambrosia Gulf, part of the Ambrosia Foods Group and backed by mid-market investment firm Pulsar Capital, will lead the expansion. The firm is already known for operating Papa Johns in India (with its first outlet set for September 2025) and managing Biryani By Kilo in the GCC, underlining its strong cross-border brand management capabilities.

Beyond launching cafés, the partnership also aims to introduce Blue Tokai’s FMCG offerings to the GCC, tapping into HoReCa (Hotels, Restaurants, Cafés) and direct-to-consumer channels, thereby significantly broadening the brand’s reach.

The first Blue Tokai café in the UAE is expected to open by Q4 2025. Coffee lovers can look forward to experiencing Blue Tokai’s celebrated single-estate coffees, manual brewing styles, and a transparent, craftsmanship-driven café environment.
