Chef Balasundaram Murugesan, fondly known as Chef Bala, has launched Anthara, a French-American patisserie and dining space in Bangalore’s vibrant Marathahalli neighbourhood. Spanning 2400 sq ft, Anthara offers an immersive gastronomic experience that unites the elegance of French patisserie with the bold comfort of American flavours.

Nestled amid blooming bougainvillea and warm earthy tones, Anthara has been designed to encourage guests to pause and savour life's simple indulgences. From day to night, the venue transforms from a vibrant café to a laid-back dining and lounge setting, inviting patrons to explore handcrafted coffees, custom-styled sandwiches, refined plated dishes, and an array of artisanal desserts.

Speaking about the launch, Chef Bala said, “Anthara is the culmination of my passion for soulful cuisine and my belief in the power of hospitality to connect people. With Anthara, I wanted to create a space that feels personal yet refined — where food isn’t just consumed, but truly experienced.”

The culinary programme at Anthara showcases a daily rotation of house-baked breads, forming the base for rich, American deli-style sandwiches. This World Whiskey Day, celebrated on May 17th, Hamilton invites guests to raise a glass to innovation and indulgence with a one-of-a-kind cocktail — The Governor’s Breakfast.

Crafted by the talented mixologist at Hamilton, this cocktail is a tribute to the most decadent meal of the day, bringing together the richness of a breakfast platter in an elegant glass. Think bacon fat-washed whiskey, zesty orange, tangy lime, a subtle hit of balsamic, and a creamy touch of yogurt — all balanced with maple syrup and Rosso vermouth.

Every sip is bold, savoury, and surprisingly smooth — a cocktail that’s both unexpected and unforgettable.

Ingredients:

  • 50 ml Whiskey (Bacon fat-washed)

  • 10 ml Rosso Vermouth

  • 20 ml Orange Juice (fresh)

  • 15 ml Lime Juice (fresh)

  • 12.5 ml Maple Syrup

  • 1 ml Balsamic Vinegar

  • 15 ml Plain Yogurt (unsweetened)

Bacon Fat-Washing Method:
Combine whiskey and 10 ml bacon fat in a sealed container. Let it infuse in the fridge for 6 hours. Then strain through a coffee filter to clarify.

To Prepare:
Add all ingredients into a mixing glass. Use the throwing technique — pouring back and forth between two tins — to aerate and emulsify. Serve over an ice block in an old-fashioned glass.

Garnish:
A crisp rolled bacon strip.
