Jugni, the esteemed Indian restaurant led by renowned restaurateur Farheen Quadri, is excited to unveil its Limited Summer Menu, inspired by the vibrant summers of Uttarakhand. This exclusive menu features a curated selection of Garhwali dishes, offering diners in Bengaluru a unique taste of the region's rich culinary heritage.
The Limited Summer Menu showcases a variety of traditional Uttarakhand dishes, each crafted with authentic ingredients and techniques. Among the highlights is Jhakiya ka Raita, a refreshing cucumber raita that incorporates Jhakiya seeds from Uttarakhand’s hilly regions, offering a distinct flavor unlike the more commonly used mustard seeds.
Another standout dish is Pumpkin Raita, a local delicacy made with hara namak (stinging nettle salt) and a blend of spices, delivering an authentic and unique taste. Gahat ki Daal, a robust lentil curry made from a special daal similar to horse gram, is known for its nutritional value and aromatic, rustic flavor. This hardy crop thrives in Uttarakhand’s challenging weather conditions, making it a staple in the region.
Bhaddu ka Chicken is another must-try, prepared in a traditional mud pot (bhaddu) over a chulha, which imparts a rich, earthy flavor to the dish. Complementing these savory dishes is Bhaang ki Chutney, a pungent chutney made with garlic, green chilies, and hemp seeds. This chutney celebrates the revered cannabis plant, known in the Himalayas for its medicinal and nutritional benefits.
The menu also includes the signature Hemp Heart Roti, a delightful combination of spinach or beetroot with flavorful hemp hearts, a perennial favorite among Jugni's patrons. Mundwa ki Roti, made from finger millet, is a gluten-free roti packed with nutrients, popular in the Garhwal region and known locally as koda or kodo.
For beverages, Farheen Quadri has crafted the Rhododendron Sangria. Known locally as buransh, the bright scarlet red flower from the Himalayan region lends a subtle, distinctive taste and a beautiful sangria-like color to this non-alcoholic, low-calorie drink.
