Park Hyatt Chennai has announced the appointment of Ershad Mullick as the new Director of Food & Beverage, bringing a wealth of experience and leadership to the luxury hotel’s culinary operations.

An alumnus of IIHM Kolkata, Ershad’s journey in hospitality began at Park Hyatt Chennai itself—making this new role a significant and nostalgic return. His extensive career spans several prominent positions within the Hyatt Hotels family, including Banquet Manager at Hyatt Pune, Director of Restaurants at Andaz Delhi, and most recently, Director of Food & Beverage at Hyatt Regency Kolkata.

Outside the Hyatt fold, Ershad served as General Manager – Operations at the Hungry & Thirsty Group, a luxury restaurant chain, where he played a key role in driving operational innovation and excellence.

“I’m truly excited to be back at Park Hyatt Chennai, this time in a new leadership capacity,” said Ershad. “It feels great to return to a place that’s familiar, yet full of fresh opportunities.”

In his new role, Ershad will oversee the Food & Beverage division, with a focus on enhancing the hotel’s renowned culinary experiences and upholding its legacy of personalized service and refined luxury.

Park Hyatt Chennai is part of the prestigious global Park Hyatt collection and offers 200 guest rooms including 20 suites. Alila Fort Bishangarh, the iconic 235-year-old warrior fort turned luxury resort near Jaipur, has announced the appointment of Mr. Eklavya Kalra as Associate Director of Sales.

A seasoned hospitality professional, Eklavya brings over 12 years of experience in luxury sales and relationship management. An alumnus of IHM Lucknow, he has previously worked with renowned hospitality brands including Accor, IHG, Jaypee Hotels & Resorts, Radisson, and The Park, most recently serving at Novotel New Delhi City Centre.

Eklavya expressed his enthusiasm about the new role, stating,

“I am truly excited and grateful to be joining Hyatt. I’ve always admired Hyatt’s culture and approach to hospitality. It’s an honour to now be part of this incredible journey at Alila Fort Bishangarh.”

Ajay Anand has joined One Window Hospitality and Iris Restaurants Group as the new Corporate Chef, taking the reins at 1932 Trevi, Jaipur’s acclaimed fine-dining destination. Known for his global expertise and innovative food philosophy, Anand is poised to reshape the restaurant’s culinary identity with his signature style that blends tradition and contemporary flair.

A statement from the restaurant confirmed that under Anand’s leadership, 1932 Trevi is set to redefine Jaipur’s fine-dining experience and establish itself as a landmark destination. The restaurant, backed by One Window Hospitality and Iris Restaurants—renowned for their luxury culinary ventures such as Idylll and RJ-14—continues to push boundaries in offering exceptional dining with artistic sophistication.

Speaking on his new role, Anand shared:

“At 1932 Trevi, my goal is to craft a menu that tells a story—where every dish reflects heritage, yet surprises with innovation. We aim to create a sensory journey that celebrates local freshness and global finesse.”

Anand’s culinary journey spans over two decades. He began his career at Taj Palace Hotel, Delhi, where he trained under the Indian Hotels Diploma Program and worked across iconic outlets like Orient Express and Café Fontana. He then spent nearly 20 years with Carnival Cruise Lines, Miami, climbing the ranks from Steakhouse Cook to Executive Chef, overseeing new ship launches and managing award-winning dining concepts like Guy’s Burger Joint, Ji Ji Asian Kitchen, and Cucina del Capitano.

Post his cruise tenure, he led operations at Pullman & Novotel Aerocity, Delhi, overseeing 10 high-volume restaurants and events catering to over 2,000 guests. Most recently, he brought his expertise to Aroqa Hospitality in New York, driving the brand’s food and beverage strategy on an international platform.

Bringing nearly three decades of experience in hospitality operations and hotel business development, Madan steps into the role with a strong industry background and a sharp strategic outlook.

Madan’s career includes leadership roles at prominent hospitality companies such as Lemon Tree Hotels and Atmosphere Hospitality, and he began his professional journey with The Taj in New Delhi. A graduate of the Welcome Group Graduate School of Hotel Administration, he is recognized for his expertise in strategic growth, business development, and client engagement—skills that are expected to be vital in accelerating Accor’s regional presence.
