Beyond the familiar comfort of idli, dosa and vada lies another side of South India, shaped by bustling tiffin rooms, temple towns, family kitchens, regional produce and recipes passed down through generations. Bringing this lesser-explored culinary landscape to Noida is Mysore Tiffin, a new 100% vegetarian dining destination conceptualised by Priyakant Gautam.
Mysore Tiffin is an extension of MaatriBhoomi, Gautam’s larger vision of reconnecting Bharat through food. While MaatriBhoomi brings India’s diverse culinary traditions together through the philosophy of “one nation on a plate,” Mysore Tiffin takes a more focused journey through Southern India, exploring its regional depth, everyday food traditions and forgotten flavours beyond the dishes most commonly associated with the region.
At its heart, Mysore Tiffin aims to present Southern Indian cuisine with honesty. The recipes are not reinvented for novelty or changed through fusion. Instead, the dining experience puts provenance, regional identity and traditional cooking practices at the centre of the table. With more than 50 vegetarian dishes, the menu takes diners on a culinary journey across Southern India, with Karnataka’s rich food culture serving as a key influence.
One of the highlights is Karnataka’s distinctive Benne culture, where butter is an important part of the culinary tradition. This is reflected in dishes such as Benne Saagu, Benne Masala Dosa and Benne Podi Dosa, bringing the warmth and nostalgia of Karnataka’s iconic tiffin rooms to the table.
The menu also features Thaate Idli, Maddur Vada and Idli Fry, alongside lesser-known preparations such as Goli Baje, Mangalore Buns and Beetroot Bonda. Rooted in local kitchens and everyday food traditions, these dishes introduce North Indian diners to flavours that remain deeply loved in their regions but are less widely explored elsewhere.
The rice selection adds another layer to the experience. Donne Pulao, Bisi Bele Bhath and Gongura Rice showcase the connection between food, geography and regional produce. Tiffin combinations such as Poori Saagu and Parotta Kurma further expand the menu, while traditional beverages including authentic Filter Coffee, Badam Milk and Sol Kadi complete the experience.
Priyakant Gautam, Founder of Mysore Tiffin and MaatriBhoomi, says, “South Indian cuisine carries extraordinary depth, yet outside the region it is often represented through only a handful of familiar dishes. Mysore Tiffin was created to bridge this gap and bring forward the recipes, ingredients and food traditions that deserve to be experienced and remembered. As an extension of MaatriBhoomi, it carries forward our commitment to preserving India’s culinary inheritance. We are not reinventing these dishes or turning them into fusion; we are presenting them with their identity, integrity and stories intact.”
The Mysore Tiffin experience will also extend beyond the restaurant. The brand plans to introduce a curated collection of Southern Indian spices sourced directly from their respective regions of origin. The range will allow diners to take these flavours home while gaining a deeper understanding of the ingredients and provenance behind traditional Southern Indian cooking.
At a time when dining experiences are increasingly shaped by standardisation and adaptation, Mysore Tiffin puts authenticity, vegetarian purity and culinary preservation at the centre of its proposition. More than simply introducing diners to a wider selection of South Indian dishes, the concept aims to offer a closer look at the South through the food cooked, shared and cherished across generations.
Launched in Noida on 1 September 2026, Mysore Tiffin brings a broader expression of Southern India to the city, told through its tiffin rooms, regional rice traditions, lesser-known snacks, source-led spices and the familiar comfort of food prepared in traditional ways.
