Below is the healthy eggless plum cake recipe with jaggery, curated especially for Christmas celebrations.

Eggless Plum Cake with Jaggery Powder

Ingredients

  • 1½ cups all-purpose flour
    (Tip: Substitute half with whole wheat flour for extra nutrition)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon powder

  • ¼ tsp nutmeg powder

  • A pinch of salt

  • ¾ cup jaggery powder

  • ½ cup butter (soft) or oil

  • 1 tsp vanilla extract

  • 1 cup dried fruits (plums/prunes, raisins, etc.)

  • ½ cup mixed nuts, chopped

  • ¼ cup orange juice (for soaking fruits)

  • Optional: Orange zest   

Instructions

Soak the Fruits
In a bowl, mix the dried fruits with orange juice. Let them soak for at least one hour (longer soaking enhances flavour). Drain excess liquid and keep aside.

Prepare the Pan & Oven
Preheat the oven to 170°C (340°F).
Grease and line a loaf pan or round cake tin with parchment paper.

Mix the Dry Ingredients
Sift together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.

Cream Butter & Jaggery
In a large bowl, beat the softened butter and jaggery powder until light and creamy.
Add yogurt and mix until smooth.
Stir in vanilla extract and orange zest, if using.

Combine Wet & Dry Mixtures
Gently fold the dry ingredients into the wet mixture in batches.
Add soaked fruits and chopped nuts, folding gently to combine.

Bake the Cake
Pour the batter into the prepared pan.
Bake for 35–45 minutes, or until a toothpick inserted in the centre comes out clean.

Cool, Serve & Store
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Slice once fully cooled.
Store in an airtight container; the flavours deepen and improve after a day.
