Hyatt Hotels Corporation has announced the opening of Brunfels Hotel, a boutique property in the heart of Mainz’s Old Town, Germany. This latest addition to The Unbound Collection by Hyatt brand marks Hyatt’s continued expansion across Europe, Africa, and the Middle East, and is the third Hyatt property in Mainz.

Brunfels Hotel, located on Schillerplatz, offers guests a prime location just steps away from iconic attractions such as the Romanesque Mainz Cathedral, the Gutenberg Museum, and the vibrant Marktplatz square. The hotel is ideal for travelers looking to explore Mainz’s rich history, culture, and vibrant urban life. With the Rhine River and numerous wine houses nearby, the hotel serves as a perfect base to experience the best of the city.

Holger Hanselmann, General Manager of Brunfels Hotel, expressed his excitement about the new opening, stating, “Brunfels Hotel is a terrific addition to The Unbound Collection by Hyatt brand, combining the magnificent heritage of Mainz with a twist of modern glamour. The property has views of the cathedral yet remains tucked away from the main streets of the Old Town, making it the ideal stay for travelers looking to soak up the local atmosphere from a revitalizing retreat.”

The five-story hotel features 127 rooms designed to blend modern aesthetics with retro chic elements, reflecting Mainz’s unique combination of tradition and modernity. Named after botanist Otto Brunfels, the property incorporates botanical-inspired artwork and decor throughout its spaces. The use of earthy tones and natural elements creates a comforting and inviting environment for guests.

Technological advancements are integrated into the hotel’s design, with climate-controlled rooms using air heat pumps and digital check-in for a seamless guest experience. In-room amenities include botanical bathroom products, complimentary mini-bars, heated floors, and flat-screen TVs, ensuring a luxurious stay for all types of travelers.

Brunfels Hotel also boasts vibrant communal spaces, including a hidden courtyard with its own bar and a private dining room for meetings and events. The central bar, a focal point of the hotel, offers botanical-inspired cocktails and a curated menu of dishes, all in collaboration with local producers like craft brewer Kuehn Kunz Rosen, gin distillery Edelranz, and coffee roastery Müller.

The on-site restaurant offers a modern take on German cuisine, focusing on seasonal and locally sourced ingredients. The wine selection highlights top German winemakers alongside lesser-known labels, showcasing the region’s rich viticulture.

Katie Johnson, Vice President and Global Brand Leader for Hyatt’s Independent Collection, commented, “Expanding The Unbound Collection by Hyatt brand with a second opening in Germany highlights our commitment to delivering story-worthy experiences within our distinct Independent Collection portfolio. We are excited for Brunfels Hotel to welcome travelers this fall and beyond.”
