Potbelly, the beloved destination for authentic Bihari cuisine, has unveiled a refreshed menu alongside a new brand avatar, marking an exciting new chapter for the cult-classic restaurant. Rooted in tradition yet contemporary in spirit, the revamp highlights Potbelly’s commitment to showcasing Bihar’s rich culinary heritage in a way that resonates with today’s diners.

The updated menu continues to feature Potbelly’s signature dishes such as Litti Chokha, Dal Bhaat Thali, and the Bhojpuri Thali, while introducing slow-cooked delights like Champaran-style Mutton, Chicken Ishtew, and Khada Masala Chicken with Lachha Paratha. The biryani section offers regional specialties including Kathal Biryani, Machhli Biryani, and Yakhni-style Mutton Biryani, all traditionally slow-cooked in earthen pots.

Starters and small plates pay homage to Bihari comfort food with dishes like Chana Dal Pyaz Kachri, Aloo Lalu Chop, Phish Phingers, and assorted poori, pakora, and paratha baskets. The beverage menu adds nostalgic touches with desi coolers like Aam Panna, Sattu Cooler, Mirchi Masala Lemonade, and iced teas infused with tulsi, rose, and lemongrass.

Alongside the menu refresh, Potbelly introduces a new visual identity that retains its rustic charm while embracing a warmer, more contemporary look.

Puja Sahu, Founder of Potbelly, said, “Potbelly has always been about honest food and stories from Bihar. This refresh is not about changing who we are, but about presenting our cuisine and our space in a way that feels more welcoming, relevant, and reflective of how our guests experience regional food today while keeping the flavours exactly where they belong.”

With this new chapter, Potbelly continues to champion regional Indian cuisine, celebrating Bihar’s food culture with authenticity, depth, and renewed energy.
