Ramee Group of Hotels has relaunched Tanatan, its signature restaurant in Indore, with a refreshed pure vegetarian identity, introducing a wider hyperlocal menu and a reimagined dining experience.

The relaunch is led by Chef Roshan Seth, Corporate Executive Chef and General Manager – F&B Operations, who has overseen the redevelopment of the menu from the ground up.

As part of the new culinary direction, Tanatan has introduced 12 new pure vegetarian signature dishes, along with a dedicated chaat section designed around Indore's preference for bold and punchy flavours.

The restaurant has also expanded its offering beyond Indian cuisine with a selection of Chinese and Continental dishes, giving diners more options while retaining the restaurant's focus on approachable and flavour-driven food.

Commenting on the relaunch, Saurab Gahoi, Senior Vice President, Ramee Group of Hotels, said:

"Tanatan has always been about creating memorable dining experiences. With this relaunch, we have made Tanatan a fully vegetarian restaurant. This relaunch gives the kitchen more room to work, and gives guests more reasons to choose Tanatan, whatever the occasion."

Among the new additions is the Saunfiyani Paneer Dum Biryani, an Awadhi-style preparation that uses the sweetness of fennel rather than relying heavily on spice. The dish has been developed for diners who prefer a milder and more layered biryani over sharper, chilli-forward versions.

The menu also features Kaddu and Kalonji Ka Shorba, a pumpkin soup built around the flavours of khatta meetha kaddu, and Benarasi Tamatar Ki Chaat, a tangy and spiced tomato broth inspired by the street food traditions of Old Banaras.

For dessert, the Gulab Tres Leches combines gulkand with three types of milk preparation, finished with rose and saffron. The creation is designed to evoke the flavours associated with a traditional betel leaf experience without using the leaf itself.

Speaking about the new menu, Chef Roshan Seth said: "We looked closely at what Indore already loves to eat and built the new menu around that. Nothing here is meant to be complicated. Every dish is 100% vegetarian and has a reason behind it, whether it comes from an old family recipe or a street food memory. We wanted guests to taste something familiar, even in the dishes that are entirely new to the menu."

The refreshed Tanatan retains its focus on hyperlocal and playful food, while reinterpreting the restaurant's culinary identity through a completely vegetarian approach.

The new menu combines familiar regional flavours with contemporary presentations, while the addition of Chinese and Continental selections broadens the dining experience for guests looking to explore different cuisines.

With the relaunch, Ramee Group expects Tanatan to attract both existing patrons and new diners in Indore, offering a wider vegetarian menu built around local preferences, familiar flavours and new culinary interpretations.
