Nestled in an enchanting alfresco setting, Sevilla has been reimagined as a Mediterranean paradise. Set apart from the main hotel building, the sprawling restaurant now boasts intimate indoor and outdoor seating, offering a tranquil escape in the heart of the city.
The revitalized menu at Sevilla is the brainchild of Chef Alex Rodriguez, a seasoned culinary expert with over two decades of global experience. A graduate of the prestigious Culinary Institute of America, Chef Rodriguez has honed his craft at world-renowned establishments like the Waldorf Astoria, Four Seasons, and St. Regis in New York. His culinary journey spans Spain, the Caribbean, and Europe, infusing traditional Mediterranean flavors with contemporary techniques.
Speaking about his vision for Sevilla, Chef Rodriguez shared, “Our reimagined menu celebrates the rich Spanish and Mediterranean heritage, blending authentic flavors with modern culinary techniques. Inspired by my family’s culinary traditions and the vibrant aromas of roasted peppers, saffron, olive oil, and fresh seafood, every dish tells a story of Spain.
