Indian Hotels Company (IHCL), the country’s largest hospitality group, has opened its first flagship Soulinaire restaurant on the Alibaug boardwalk, a space designed to blend seaside calm with the brand’s signature flair for culinary storytelling.

What began as IHCL’s creative lifestyle catering brand has now evolved into one of India’s most recognised names for curated dining experiences, from lavish events to private celebrations. And now, this spirit finds a permanent home by the Arabian Sea.

From its inception as a bespoke catering service, it has grown into a brand synonymous with innovation, craftsmanship and warmth. The two-storey, 200-seater restaurant opens onto views that stop conversations. On the ground floor, large glass windows let in the sea breeze while a circular bar and an indoor pool add to its tropical charm. The terrace connects to an airy lounge, perfect for laid-back brunches or cocktail hours that stretch into sunset.

Upstairs, the mood turns warm and intimate, bamboo, jute, and sun-washed brick set the tone for a private banquet area with a live kitchen and panoramic balcony views. Whether for intimate gatherings or grand celebrations, Soulinaire’s design captures Alibaug’s relaxed rhythm with a touch of refined fun.

The menu reads like a journey, familiar, playful, and full of flavour. From Akuri and Poha that bring back Mumbai mornings to Paneer Tikka Tacos and Masala Croissant Bhaji with their cheeky twists, each dish carries a story. Local favourites like Misal Pav, Bombil Fry, Jheenga Masala, and Gaoran Kombdi Rassa pay tribute to the coast, while global bites like Honey Chilli Potatoes, Sichuan Chicken, and Beetroot & Goat Cheese Tartine keep things fresh.

Cocktails are as much a highlight as the food. The Alibaug Sling and Mai Tai bring tropical flavours to life, while the Sunset Negroni and Espresso Martini turn evenings into conversations. Every drink, like every dish, reflects the coastal character of the space, lively, layered, and effortlessly stylish.

Desserts arrive like curtain calls, dramatic and indulgent. The Molten Choco-Walnut Symphony and Tantalizing Tiramisu Twist headline the list, while ice cream flavours like Sitaphal Yuzu and Tender Coconut keep nostalgia alive at the live dessert counter.
