TajSATS Air Catering Limited, a joint venture of the Indian Hotels Company IHCL and SATS, has unveiled an impressive addition to its portfolio—the opening of a state-of-the-art kitchen at the newly inaugurated Manohar International Airport in Mopa, Goa. This culinary hub is poised to elevate the dining experience for air travelers, aligning with the growing demands of modern aviation.
Manish Gupta, Chief Executive Officer of TajSATS, emphasized the company's commitment to fortifying and expanding its operations in the field of air catering. Goa, renowned as a global leisure destination, is also set to flourish as a significant aviation hub with the advent of its second airport. Gupta noted that this expansion aligns perfectly with the changing dynamics of the travel industry, including the surge in private aviation and charter flights that complement commercial travel.
Strategically situated within the Mopa Airport premises, the new kitchen spans a sprawling 45,000 square feet. This expansive space is meticulously equipped to cater to a substantial volume, capable of serving over 20,000 meals each day. Employing cutting-edge culinary technology, the kitchen is well-equipped to handle complex orders, especially for clients with spacious cabin aircraft. The facility also boasts a dedicated tasting room named 'The Atelier,' providing a creative space for chefs to collaborate and ideate while showcasing specially curated gourmet menus.
With this latest addition, TajSATS now operates eight flight kitchens across prominent cities in India, including Mumbai, Delhi, Chennai, Kolkata, Amritsar, and Bangalore, in addition to its presence in Goa.

This new kitchen at Manohar International Airport is poised to not only meet but exceed the expectations of discerning air travelers, ushering in a new era of elevated dining experiences amidst the skies.

The Yin Menu celebrates calm, subtlety and restraint. Dishes like Smoked Avocado Nigiri and Avocado Carpaccio with Yuzu Soy bring gentle brightness, while Crystal Truffle Cream Cheese Dim Sum and Cantonese Dumpling Broth offer soothing depth. Highlights such as Rainbow Roll and Salmon Uzukuri with Jalapeño Relish pair coolness with a hint of heat. The experience concludes with Thai Green Curry with Stir-Fried Asian Greens and a serene Vanilla Panacotta with Citrus Glaze, echoing the quiet charm of dusk.
The Yang Menu brings energy, boldness and expression. The journey begins with spirited dishes like Spicy Tuna Maki, Som Tam Seafood Salad, and Shaomai Chicken & Chestnuts. The flavours intensify with Tom Yum Soup, Spicy Red Dragon Roll, and Papaya’s signature Layered Sushi Pizza with Salmon Carpaccio. Power-packed plates such as Wok-Fried Tofu & Mushrooms in Crispy Chilli and Thai Red Curry keep the momentum strong, ending with the dramatic Chocolate Ball on Fire, a blend of dessert and theatre.
Across both menus, every element is designed to create balance, colours, aromas, ingredients and textures come together to bring harmony to each plate.
