TANICA Debuts at The Singapore EDITION with Modern Asian Flavours

The Singapore EDITION has introduced TANICA, a new restaurant celebrating modern Asian flavours through regional ingredients, herbs, spices and open-fire cooking. Located in an intimate, arboretum-inspired setting surrounded by greenery, TANICA brings together food, wine and shared dining in a relaxed setting.

The name TANICA combines “botanical” and “tannins”, reflecting its connection with nature and its considered approach to flavour. The menu draws from Asian culinary traditions, with dishes shaped by herbs, spices, the wok and Josper grill. Sharing is central to the dining experience, encouraging guests to enjoy the dishes together.

TANICA focuses on regional sourcing, seasonality and responsible use of ingredients. The kitchen works with local suppliers where possible and also follows a whole-product approach to reduce waste.

The menu includes starters such as Hokkaido Sea Urchin Pie Tee, Chicken Rendang Puff and Charcoal Grilled Indonesian Squid. From the wok, guests can try the XO Mapo Tofu Lobster, combining grilled rock lobster, silken mapo tofu, asparagus and minced chicken with homemade bacon XO sauce.

The Josper grill features dishes including Brown Butter Sambal Wagyu Hanger Steak, Percik Grilled Spring Chicken, Harissa Pyrenees Lamb Rack, Little Joe Grass Fed Beef Rib Eye, Grilled Grouper and Black Sambal Murray Cod. Sides include Wok Fried Asian Greens, Josper Roasted Potato Wedges and Fragrant Rice.

Signature dishes also include Asam Pedas Seafood Risotto, which brings Malay flavours to the Italian classic, and the “Iga Bakar Kicap” 72-Hour Wagyu Beef Short Rib, slow-prepared and glazed with sweet soy sauce, sambal embe and fresh herbs.

Desserts continue the Southeast Asian influence with Fragrant Pandan, Cempedak & Pulut Hitam, Soya Milk & Lemongrass Crème Brûlée and Kuantan Chocolate & Pisang Emas.

TANICA is also introducing a Weekday Three-Course Set Lunch from Monday to Friday, priced at SGD 48 per person. Available from 12 PM to 2:30 PM, the menu includes a choice of starters, mains and desserts, along with coffee or tea. Guests can add a glass of red or white wine for SGD 15 or Saicho Single Origin Osmanthus Sparkling Tea for SGD 12.

Every Sunday, Sunday Table will offer a semi-buffet brunch from 12 PM to 3 PM, starting at SGD 98 per person. The spread includes salads, charcuterie and cheese, pastries, fruits and cereals, along with unlimited brunch à la carte options. For a more indulgent experience, the SGD 168 Sunday Table & Wines option includes free-flow wines, spirits and cocktails, while the SGD 198 Sunday Table & Champagne option adds Louis Roederer Collection 246 NV Champagne.

To mark the launch, Marriott Bonvoy members can enjoy a complimentary 45ml Yuzu & Melon Martini when dining at TANICA from September 17 to October 31, 2026.
