VVM Restaurant Consultants, the parent company of Banaraswala Ghar Se Ghat Tak and Chalu Chinese, has expanded its culinary portfolio with the launch of Birian, a new restaurant brand focused on biryani and traditional Indian curries. The newly launched restaurant is located in Rohini Sector 8, Pocket 4, Delhi.
Birian has been created to bring slow-cooked biryani and authentic Indian flavours to diners, with a focus on traditional cooking methods, quality ingredients and consistency. The menu includes Chicken Dum Biryani and Dahi Kebab, along with a wider selection of Indian curries, kebabs, tikkas and stuffed parathas.
Commenting on the launch, Vibhanshu Mishra, Founder & CEO, VVM Restaurant Consultants, said, "Birian marks our entry into the biryani category with a definite focus on authentic flavors, age-old cooking methods and our own unique cuisine. We want to create a biryani brand that combines tradition with a modern twist."
Biryani remains at the heart of Birian's menu. The brand uses aged long-grain rice and unique spice blends, with the dishes prepared using the traditional dum cooking technique. Each preparation is made layer by layer, with rice, gravy and herbs added one after another to allow the flavours to develop naturally.
The menu also features a selection of kebabs, tikkas and Indian breads. Highlights include Murgh Tikka, Afghani Tikka, Seekh Kebab and Dahi Ke Kebab. Guests can also choose from stuffed parathas such as Chicken Keema, Aloo Pyaz and Gobi Paratha, bringing together traditional flavours across grills, breads and slow-cooked dishes.
The use of caramelized onions and quality herbs adds to the aroma and richness of the biryani. The Birian concept has been developed under the supervision of Chef Prashant Singh, with a focus on authentic Indian tastes and the company's own recipes. With the launch of Birian, VVM Restaurant Consultants is looking to build on its existing food and beverage portfolio while bringing its take on traditional Indian biryani and curry preparations to diners in Delhi.
