Waterside at Feathers Hotel Chennai is inviting seafood lovers to indulge in “Sea You at Waterside”, a specially curated seafood experience taking place every Friday night in October.

Designed as a celebration of the bounty of the sea, the dining experience brings together an extensive selection of fresh seafood, interactive live grilling, globally inspired marinades and an exotic seafood bar.

The highlight of the experience is the Interactive Grill Station, where diners can choose from a selection of seafood and customise their preparations with marinades inspired by cuisines from around the world.

The seafood selection includes fresh prawns with shell, octopus, grouper, cuttlefish, seer fish, seabass, mackerel, red snapper and squid.

Guests can pair their chosen seafood with marinades including Chimichurri, Chermoula, Lemon Dill, Garlic & Pomegranate Mustard, Harissa, Teriyaki and Hoisin Garlic, offering a range of flavours from fresh and citrusy to spicy and umami-rich.

The grilled seafood can be accompanied by a selection of hearty sides such as char-grilled vegetables, creamy spinach, sautéed haricot beans, honey-glazed carrots, mashed potatoes, potato wedges and French fries.

For further customisation, diners can choose from sauces including Herb Lemon Beurre Blanc, Citrus Hollandaise, Al Aqua Plaza, Hot Garlic and Orange Butter.

Adding another dimension to the experience is the Exotic Seafood Bar, featuring an indulgent selection of poached prawns, blue crabs, sand lobster, mackerel and octopus. The seafood spread is complemented by citrus segments, dressings and condiments.
