ITC Maratha in Mumbai has unveiled a new gem in its fine-dining crown: Yi Jing, a concept dining Chinese restaurant that promises to tantalise the taste buds of Mumbai's gourmands. This latest addition marks a new chapter in ITC Hotels' journey of culinary excellence, offering a reimagined taste of Chinese cuisine.

Yi Jing, led by the experienced Executive Chef Liang Xiao Qing, is the fourth instalment of ITC Hotels' Chinese concept dining. The restaurant specialises in the rich, diverse flavours of Sichuan and Hunan cuisines. Nestled on the lobby level of ITC Maratha, Yi Jing extends over 4250 sq ft with a split-level design and has the capacity to seat over 90 guests.

The restaurant's design is a feast for the eyes. It's divided into four distinct zones: demonstration kitchens for ‘Wok Hei’, a Dimsum & Hand Pulled Noodle Bay, an arched bar, and two private dining rooms. The decor, with bright red accents on wallpapers and chairs, harmonises with repurposed jute pendant lamps, creating an atmosphere of sophisticated elegance.

Yi Jing’s extensive menu features a range of crowd-pleasers: handcrafted swan-shaped Char Sui, Sake & Edamame Dimsums, steamed pork baos, Hunan style stir-fried tofu, and water chestnut dishes. A highlight is the Hand-Pulled Lamian Noodles, showcasing the chef's years of skill development. The restaurant also offers specialties like Beijing Roast Duck, along with an assortment of farm-fresh vegetarian dishes, seafood, and free-range meats in enticing oriental sauces. The dessert selections are equally impressive, promising an unforgettable dining experience.

Bhagwan Balani, the General Manager of ITC Maratha, Mumbai, expressed excitement about Yi Jing's launch. He envisions the restaurant as more than a dining spot; it's a celebration of culinary artistry. Balani is confident that Yi Jing’s modern interpretation of Chinese flavours will not only elevate but revolutionise Mumbai’s dining scene, staying true to ITC’s commitment to exceptional dining experiences.

Step into the culinary world of Chef Ankur Sharma, Executive Chef at The LaLiT Chandigarh, as he brings the vibrant flavours of Southeast Asia to your plate with Bambu Bali Chicken—a Balinese classic celebrated for its rich, spicy complexity and deep cultural roots.

This dish begins with a signature Base Bumbu—a potent mix of shallots, garlic, red chillies, shrimp paste, candlenuts, and tomatoes. The ingredients are lightly roasted to intensify the aroma before being ground into a thick paste. This forms the foundation of the dish, where the chicken is seared and simmered to perfection.

Infused with Bambu Bali paste, oyster sauce, sweet soy, palm sugar, chicken stock, and coconut milk, the chicken slowly absorbs a symphony of flavours—sweet, spicy, salty, and deeply savoury. A final touch of Nam Prik Pao, a Thai chilli jam, adds a hint of smokiness and warmth that lingers on the palate.

Chef Sharma garnishes the dish with crispy fried shallots and fresh coriander, enhancing both texture and freshness. Best served with steamed jasmine or sticky rice, this preparation is perfect for a hearty meal that tells a story of tradition and passion.

“This dish captures the essence of Balinese cuisine—bold, aromatic, and soulful. At The LaLiT Chandigarh, we love introducing our guests to flavours that travel far but feel like home,” shares Chef Ankur Sharma.

With Bambu Bali Chicken, The LaLiT Chandigarh offers guests more than just food—it offers an experience steeped in authenticity and crafted with heart.

2. Bloody Maria: The Bold Brunch Disruptor

A spicier cousin of the Bloody Mary, this version swaps vodka for tequila and brings in Dunkel Lager6, creating a deep, smoky finish. Infused with tomato juice, lemon, Worcestershire sauce, and a touch of Tabasco, Bloody Maria is the fiery yet balanced rebel that brunch never knew it needed.

3. Spiked Mangoes: A Tropical Tease

The result? A rich, citrusy, bittersweet blend with dark berry undertones—served over ice and topped with an orange twist.

Brau GALIE's beer-tequila cocktail lineup is more than just innovative—it’s a testament to Bengaluru’s evolving bar culture and the creativity of local talent. So the next time you’re craving something new, ditch the usual and head to Brau GALIE to raise a glass to bold ideas and brilliant brews.
