Globally, the bubble tea industry is on a steep growth trajectory, currently valued between $2.75 and $3 billion and expected to nearly double by 2030. Ikk Panjab has introduced its Winter Menu, bringing together flavours that celebrate Punjab’s heritage and the warmth of the season. The menu reflects the history, traditions and cooking styles that have shaped Punjabi kitchens for generations, highlighting dishes prepared with care and rooted in the region’s winter produce.

The menu opens with Sarson da Saag and Makki di Roti, a staple that has been part of Punjabi winters for centuries. Traditionally slow cooked in clay pots and paired with rotis made from fresh winter corn, this classic dish continues to be one of the most comforting expressions of regional cuisine. Joining it is Baingan Ka Bharta, a dish that originated from community hearths where vegetables were roasted in embers, then mashed and seasoned with simplicity. The flavours have stayed true to the cooking methods that shaped it long ago.

Saag Gosht brings together mustard greens harvested in winter and slow-cooked tender meat, creating a wholesome dish rooted in pastoral life. Its flavours remain honest and grounded, finished with a touch of white butter. From the frontier cooking traditions comes Charsi Tikka, known for its minimal use of spices and focus on technique. Prepared boti-style with tender mutton and a light char from mutton fat, it reflects rustic flavours shaped by open-market kitchens.

To honour the nourishing rituals of the season, the menu features Makai da Shorba and Kharode da Shorba. These warm, restorative broths were historically prepared to help families through cold winters, long before the idea of comfort food became popular. For dessert, the menu brings Adrak ka Halwa, a traditional winter preparation made with ginger, ghee and grain, offering warmth and vitality. It stands alongside the legendary Gajar Ka Halwa, slow cooked with milk, khoya and jaggery.

The Winter Menu also introduces cocktails inspired by memories and the seasonal landscape of Panjab. Smoke & Soil, created with smoked beetroot, ginger and honey, is inspired by winter conversations around the angithi in old Panjab Gymkhana lawns. The Sweet Sip brings together ghee-washed gin, carrot, coconut, saffron and nuts, offering a contemporary take on festive club evenings where trays of mithai were shared among families.

Through this Winter Menu, Ikk Panjab celebrates the land, the season and the traditions that continue to define the region’s identity. Prepared with integrity and served with grace, the menu invites guests to experience winter as Punjab has known it for generations.
